Eating beef allowed in Vedic Culture! Read more.
Srila Prabhupada: Yes, this is our proposal: "Why should you kill the cow? Let the cow be protected." You can take the cow's milk and use this milk for making so many nutritious, delicious preparations. Aside from that, as far as meat-eating is concerned, every cow will die -- so you just wait a while, and there will be so many dead cows. Then you can take all the dead cows and eat. So how is this a bad proposal? If you say, "You are restraining us from meat-eating" -- no, we don't restrain you. We simply ask you, <strong>"Don't kill. When the cow is dead, you can eat it.</strong>"

In Koran or Bible there is no history of killing of Cow. There is no proof of any instance of cow Killing.

I found the question asked by Arun thought provoking and inspired me to reply even though its quite Late.
Milk as you mentioned is a transformation of BLOOD, but not BLOOD. It is a natural mechanism expertly devised by GOD to support Human existence and costs no life in its production. I like to submit following Humble facts as how Cows if accepted as family members actully supports the Agriculture and not usurp the grain production.
Cows main food is green grass and dry grass (left over of paddy/maize/corn/wheat crops). A farmer having 2 acres of land and moderate irrigation (water) facilities can set aside 1/2 acre for green grass which can support 4 cattle (2 cows, 2 bulls). Cows will ensure good stream of milk and Bulls help farmer in many aspects of farming. Dung will be used as fertilizer for the 2 acres (no need of factory fertilizers). In this way proper tending of cattle adds up to Good Agriculture production. This was the way of Vedic Human civilization from time immemorial until recent days where barraging of factory machines and fertilizers have deprived the modern humans with this valuable information. Following link provides rich information on cows.

That's a valid question indeed the answer is in your question itself. The calf has the first right for the cow's milk and whatever is remaining can be used for human consumption. And un-utilized milk decays and affects the health of the cow. We do not encourage farming cows just for its milk. We promote the idea of maintaining cows in one's own backyard and treat them as one's own family members. We only recommend using the surplus milk for one's own needs and if excess can be sold to the market.

I'm one of those who still use diary products but don't eat meat, seafood or egg anything which contains BLOOD. If we are concerned about taking a life away, how you are justyfing production of milk(which is separated from BLOOD) and icecreams from cow.. will the cows still, not eat the large production of grains(70% in US) , which can be used to serve people in hunger ? or the cows will not contribute to greenhouse gas generation ? or the cows will not be grown in factory farming mode ?... I'm not against using dairy products, but how u can create a sustainable way of producing milk for 6.7 billion ppl , if we keep justifying, using dairy products doesn't affect animals. ??? In my opinion, any byproduct of animals is not going to sustainable in very near future..
